Ingredients:
- 500 g minced veal
- 3 egg yolks
- 2 dl whipping cream
- 1 tsp salt
- 1 pinch of white pepper
- Butter for frying
- Breadcrumbs for breading
For serving:
- Mashed potatoes
- Stir-fried lingonberries
- Green peas
- Browned butter

Prepare the mince : Start by making sure all the ingredients are well chilled, including the veal mince and the cream. This helps keep the mince firm and easy to work with.

Mix the mince : Put the veal mince in a bowl and add the egg yolks, salt and white pepper. Mix gently with a spoon or your hands until everything is well mixed.

Add cream : Add the cream a little at a time while continuing to gently stir. Mix until the batter is even and smooth. The mince should be soft and loose, but still hold its shape.

Shape the patties : Divide the batter into 4-6 equal parts and shape them into round, flat patties. Dip them carefully in breadcrumbs so that they are covered on both sides.

Fry the Wallenbergs : Heat plenty of butter in a frying pan over medium heat. Fry the steaks gently in the butter for about 4-5 minutes per side, until they are golden brown and cooked through.

Serving : Serve the Wallenbergs with mashed potatoes, green peas, lingonberries and preferably some browned butter on top. The mashed potatoes should be really fluffy and creamy for best results.
