Swedish Wagyu from Frönshult farm, Scania:
A Swedish interpretation of wagyu from Frönshult's farm in Skåne. Our own grading which is a Reserva, which means very marbled meat, aged for at least 50 days in our specially imported Dry-Ager coolers. The animals are a cross between wagyu and holstein from Sweden, mainly grass-fed with the addition of grain for extra fatness.
Flap steak from Snake River Farms, USA:
Top quality Wagyu with a BMS of 6-8 on the Japanese scale. The animals are a cross between Angus and Wagyuras, raised in Washington state near the Canadian border. The meat is vacuum-tendered and has been served by Wolfgang Puck at the Oscars - eat like a movie star!
